Voorbereiden

Breng ruim water aan de kook in een pan met deksel voor de rijst. Pers de knoflook of snijd fijn. Snijd de bosui in dunne ringen. Bewaar het groene en het witte deel apart van elkaar. Kook de rijst, afgedekt, in 12 – 15 minuten gaar. Giet af en laat uitstomen zonder deksel.

Tip: Let jij op je calorie-inname? Kook dan alle rijst, maar gebruik 2/3 rijst in dit gerecht. Van de overige rijst kun je een rijstsalade maken de volgende dag.

Roerbakken

Verhit ondertussen 1/2 el zonnebloemolie per persoon in een wok of hapjespan op middelhoog vuur. Bak de knoflook en het witte gedeelte van de bosui 1 - 2 minuten. Voeg de Oosterse groentemix toe en roerbak 2 - 3 minuten op hoog vuur. Voeg de helft van de sesamolie en de helft van de sojasaus toe aan de groenten en schep om. Breng op smaak met peper en zout.

Gehaktballetjes bakken

Verhit 1/2 el zonnebloemolie per persoon in een koekenpan op middelhoog vuur. Halveer de gehaktballetjes en bak in 3 – 5 minuten rondom bruin. Voeg 1/2 el bruine suiker per persoon toe en schep om totdat de suiker gesmolten is. Blus af met de teriyakisaus, de overige sojasaus, de overige sesamolie en 2 el water per persoon. Verwarm het geheel nog 2 minuten.

Tip: Let jij op je zoutinname? Laat de sojasaus in deze stap dan achterwege en gebruik alleen de teriyakisaus, sesamolie en water.

Hak de pinda's grof. Verdeel de rijst en de geroerbakte groenten over diepe borden. Schep de teriyaki-gehaktballetjes erop en schenk de teriyakisaus uit de pan over de groenten en de rijst. Garneer met de pinda's en het groene gedeelte van de bosui.
