Cooking Steps

Voorbereiden

Bereid de bouillon. Pers de knoflook of snijd fijn. Snijd de peterselie fijn. Weeg 70 gram couscous af per persoon en meng met de bouillon in een kom. Laat, afgedekt, 10 minuten wellen. Roer daarna los met een vork. Meng in een kleine kom: de yoghurt, de helft van de knoflook en de peterselie. Breng op smaak met peper en zout.

Tip: Gebruik je alle couscous? Bereid deze dan in 325 ml bouillon per persoon.

Groenten roerbakken

Verhit in een wok of hapjespan 1/2 zakje Midden-Oosterse kruiden per persoon zonder olie 1 minuut op middelhoog vuur. Voeg 1/2 el olijfolie per persoon toe, samen met de overige knoflook en fruit de knoflook 1 minuut. Voeg de groentemix toe. Roerbak de groenten 6 - 7 minuten op middelhoog tot hoog vuur.

Tip: Zijn de broccoliroosjes aan de grote kant? Snijd ze dan wat kleiner.

Schelvis bakken

Verhit 1/2 el roomboter per persoon in een koekenpan op middelhoog vuur. Bak, wanneer de boter heet is, de schelvis 2 minuten per kant. Breng op smaak met peper en zout.

Serveren

Voeg de couscous toe aan de koekenpan met groenten. Meng goed door en verwarm het geheel nog 1 minuut. Breng eventueel op smaak met peper en zout. Verdeel de couscous over de borden. Leg de schelvis, inclusief saus, erbovenop. Garneer met de yoghurtsaus en de overige bladpeterselie.

Tip: Volkoren couscous is rijk aan vezels. Veel vezels eten is goed voor je darmflora en dat levert veel voordelen op voor je gezondheid, zoals een versterkt immuunsysteem en een gezond cholesterolgehalte.
