- Preheat the oven to 180°C. Prepare the stock.
- Peel the potatoes and cut them into smaller pieces. Dice the carrot.
- Heat a drizzle of olive oil in a soup pot or large pot over medium-high heat.
- Fry the pumpkin with the potatoes, the carrot and the thyme for 3 - 4 minutes, seasoning with salt and pepper.
- Add the stock, the passata and two thirds of the coconut milk, then cover with the lid and bring to the boil.
- Lower the heat and allow to cook gently for 20 - 25 minutes.
- Meanwhile, boil plenty of salted water in a pot or saucepan.
- In a bowl, combine the mince with the panko. Season with salt and pepper, then shape into meatballs.
- Boil the meatballs for 8 - 10 minutes, then drain and set aside.
- Meanwhile, heat the bread roll in the oven for 8 - 10 minutes.
- Remove the soup from the heat and process with an immersion blender until smooth.
- Add an extra splash of water as necessary if it seems too thick, then season generously with salt and pepper.
- Serve the soup in bowls or deep plates.
- Drizzle over the rest of the coconut milk.
- Top with the meatballs and serve the bread roll alongside.
