Cooking Steps

Prepare

  • Preheat the oven to 180°C. Prepare the stock.
  • Peel the potatoes and cut them into smaller pieces. Dice the carrot.
  • Heat a drizzle of olive oil in a soup pot or large pot over medium-high heat.
  • Fry the pumpkin with the potatoes, the carrot and the thyme for 3 - 4 minutes, seasoning with salt and pepper.
Make the meatballs

  • Add the stock, the passata and two thirds of the coconut milk, then cover with the lid and bring to the boil.
  • Lower the heat and allow to cook gently for 20 - 25 minutes.
  • Meanwhile, boil plenty of salted water in a pot or saucepan.
  • In a bowl, combine the mince with the panko. Season with salt and pepper, then shape into meatballs.
Finish the soup

  • Boil the meatballs for 8 - 10 minutes, then drain and set aside.
  • Meanwhile, heat the bread roll in the oven for 8 - 10 minutes.
  • Remove the soup from the heat and process with an immersion blender until smooth.
  • Add an extra splash of water as necessary if it seems too thick, then season generously with salt and pepper.
Serve

  • Serve the soup in bowls or deep plates.
  • Drizzle over the rest of the coconut milk.
  • Top with the meatballs and serve the bread roll alongside.
