Pompoen roosteren

Verwarm de oven voor op 180 graden. Halveer de pompoen en verwijder de pitten en de zaden. Snijd in blokjes van 2 - 3 cm en weeg de juiste hoeveelheid af. Rooster de pompoenblokjes op een bakplaat met bakpapier 15-20 minuten in de oven. Haal de pompoen eruit, maar laat de oven aan staan. Rasp de schil van de sinaasappel en pers daarna uit.

Vet een cakeblik met een lengte van 25 cm in of bekleed met bakpapier. Mix in een grote kom de pompoenblokjes met een staafmixer samen met het sinaasappelsap, 80 ml water en 160 zonnebloemolie tot een gladde puree. Voeg de cakemix toe aan de pompoenpuree. Voeg 11/2 tl gemalen kaneel en de sinaasappelrasp toe en mix met een (hand)mixer of garde tot een egaal beslag.

Giet het beslag vervolgens in de cakevorm. Bak de cake 50 - 55 min in de oven. Meng intussen in een kleine kom 20 gram poedersuiker met de roomkaas. Bewaar de roomkaas in de koelkast tot de cake afgekoeld is.

Controleer na 55 minuten of de cake klaar is door er met een satéprikker in te prikken. Komt hij er schoon uit? Dan is de cake klaar. Haal de cake uit de oven en laat hem volledig afkoelen. Besmeer de bovenkant met de roomkaas. Garneer met de pecannoten en snijd de cake in plakken.
