Cooking Steps

  • Preheat the oven to 180°C. 
  • Grease a round cake tin. 
  • Add the red velvet cake mix, eggs, sunflower oil and water to a large mixing bowl. 
  • Mix well until it becomes a smooth batter.

  • Add the batter to the cake tin. 
  • Bake the cake for 30 - 35 minutes in the oven. 
  • Meanwhile, add the mascarpone, powdered sugar and heavy cream to a mixing bowl. 
  • Mix with a handheld mixer until you have firm peaks.

  • Remove the cake from the oven and let it cool down completely, for about 30 minutes. 
  • Once the cake has cooled, slice the cake horizontally so that you get two layers.
  • Spread a third of the mascarpone frosting over the bottom layer of the cake. 
  • Place the other cake layer on top.

  • Coat the entire outside of the cake with the rest of the mascarpone frosting. 
  • Use the rosemary and cranberries to decorate the top of the cake so that it resembles a Christmas wreath.
  • Slice the cake and serve.
