- In a large bowl, combine the flour, baking powder and 2 tsp of sugar.
- In a second bowl, whisk the eggs. Add the buttermilk and whisk everything together until lots of bubbles start to form.
- Gently fold the egg mixture through the dry mixture until a smooth batter forms.
- In a large frying pan, heat the sunflower oil over medium-high heat.
- Use a ladle to pour the batter into the pan in parts. Fry about 3 or 4 pancakes at a time, for 1 - 2 minutes on each side.
- Remove from the pan and keep warm under aluminium foil.
- Repeat until all the batter is used. Add sunflower oil to the pan in between if needed.
- Halve the croissants lengthways and layer the ham and cheese on the bottom halves.
- Close with the top halves and transfer the croissants to a parchment-lined baking sheet.
- Bake in the oven for 6 - 8 minutes.
- In the meantime, peel and dice the mango.
- Serve the yogurt into four bowls.
- Top the bowls with the mango and cranberry & walnut mix, then drizzle with honey to taste.
- Juice the oranges and serve the juice in four glasses.
- Slice the strawberries.
- Add the cream and 1 tsp of sugar to a mixing bowl and mix with a handheld mixer until it forms stiff peaks.
- Transfer the pancakes to plates and top with the whipped cream and strawberries.
- Arrange the croissants on a serving platter.
- Lay the table with the yogurt bowls, orange juice, ham and cheese croissants and strawberry pancakes.
