Cooking Steps

Voorbereiden

Snijd de aubergine in blokjes van 1 - 2 cm. Snijd de rode ui in halve maantjes. Snijd de rode puntpaprika in smalle reepjes. Snijd of pers de knoflook fijn. Snijd de koriander grof.

Tip: Aubergine is een lekkere en veelzijdige groente. Wist je dat hij vol zit met ijzer en vitamine C?

Parelcouscous koken

Breng per persoon 200 ml water en 1/4 bouillonblokje aan de kook in een pan met deksel. Voeg vervolgens de parelcouscous toe en laat 12 - 13 minuten koken. Giet daarna af indien nodig.

Tip: Let jij op je zoutinname? Gebruik dan de helft van de benodigde hoeveelheid van het bouillonblokje.

Groenten aanbakken

Verhit 1/2 el olijfolie per persoon in een hapjespan met deksel. Voeg de knoflook, rode ui en de Midden-Oosterse kruiden toe en fruit 1 - 2 minuten. Voeg vervolgens de aubergine toe en bak 4 - 5 minuten afgedekt. Voeg als laatste de rode puntpaprika toe en bak nog 4 minuten afgedekt. Bak tenslotte het geheel 1 minuut zonder deksel.

Kipworstjes bakken

Verhit 1/4 el roomboter in een koekenpan met deksel. Bak de worstjes 3 - 4 minuten rondom bruin. Dek vervolgens de worstjes af en bak nog 3 - 4 minuten of tot de worstjes gaar zijn.

Sumak-labne mengen

Meng in een kom de labne met 1/4 tl sumak per persoon. Meng vervolgens de groenten inclusief gekruide olie uit de pan door de parelcouscous zodat de smaken goed intrekken. Breng op smaak met peper en zout.

Serveren

Serveer de parelcouscous met de gestoofde groenten en de gekruide kipworstjes. Voeg naar smaak de gekruide labne en de verse koriander toe.

Tip: Is niet iedereen liefhebber van koriander? Laat het dan achterwege of serveer apart, zodat je de koriander zelf naar smaak kunt toevoegen.
