- Boil plenty of water in a pot or saucepan.
- Cut the shallot into half rings.
- Roughly chop the bacon.
- Cook the linguine for 9 - 11 minutes. Reserve 25 ml pasta water per person, then drain and set aside.
- Heat a drizzle of sunflower oil in a frying pan over medium-high heat and add the bacon to the pan.
- Meanwhile crush or mince the garlic.
- Add the garlic and shallot to the frying pan and fry for 2 - 3 minutes.
- Meanwhile, cut the cucumber into crescents and roughly chop the kimchi.
- Stir in the kimchi* including remaining liquid, sambal*, heavy cream, and Korean-style spices. Simmer the sauce for 3 - 4 minutes or until the linguine is done.
- Meanwhile, make a dressing by mixing the sesame oil, soy sauce, sugar, and white wine vinegar in a salad bowl.
- Add the cucumber and toss everything together. Season to taste with salt and pepper.
- Add the linguine, reserved pasta water, to the sauce and mix everything together.
*Take care, this ingredient is spicy!
- Serve the pasta on plates and garnish with the Grana Padano flakes.
- Serve the salad on the side and garnish with the black sesame seeds.
