- Preheat the oven to 200°C.
- Slice the onion into half rings. Cut the Romano pepper into strips.
- Heat a drizzle of sunflower oil in a frying pan over medium-high heat. When the pan is nice and hot, fry the schnitzel for 5 minutes until golden-brown, turning regularly.
- When the schnitzel is done, remove from the pan and cut it into strips.
- Heat a drizzle of sunflower oil in another frying pan over medium-high heat. Fry the onion and Romano pepper with the BBQ rub* for 4 - 6 minutes. Season to taste with salt and pepper.
- Wrap the tortillas in aluminum foil and heat in the oven for 2 - 3 minutes.
- Roughly chop the lettuce in the meantime.
*Take care, this ingredient is spicy! Use as preferred.
- In a bowl, combine the slaw mix with the sugar, the white wine vinegar, the mustard seeds and half of the mayonnaise (see Tip).
- Season to taste with salt and pepper.
- Crumble the cheese into a small bowl.
Health Tip: if you're watching your calorie intake, substitute the mayonnaise for yogurt.
- In a small bowl, combine the mango ketchup with the water for the sauce and the rest of the mayonnaise. Taste and add some sambal if preferred.
- Serve the tortillas on plates.
- Serve all the toppings separately at the table and allow everyone to assemble their own wraps as preferred.
- Drizzle with the mango sauce to finish.
