- Peel or thoroughly wash the potatoes and cut them into rough pieces.
- Transfer to a pot or saucepan and submerge with plenty of salted water (see Tip).
- Boil the potatoes for 12 - 15 minutes, then drain and set aside.
- In the meantime, prepare the stock.
Health Tip: if you're watching your salt intake, just use plain water.
- Finely chop the onion and slice the carrot into thin rounds.
- Heat a drizzle of olive oil in a deep frying pan over medium-high heat, then add the onion, the carrot and the water (see pantry for amount).
- Cover with the lid and allow to stew for 8 - 10 minutes.
- Deglaze with the white wine vinegar, then add the honey and the rosemary and fry for another minute. Season to taste with salt and pepper.
- Meanwhile, wrap the burger with the bacon.
- Melt a knob of butter in another frying pan over medium-high heat. Fry the burger for 2 - 3 minutes per side, then add the onion chutney and the stock. Fry for one more minute, then turn off the heat.
- Mash the potatoes with a knob of butter and a splash of milk.
- Stir in the mustard, cream cheese and Italian herbs, then season to taste with salt and pepper.
- Finely chop the chives.
- Serve the mashed potatoes with the vegetables and the burger.
- Serve with the sauce and garnish with the chives to finish.
