Cooking Steps

Voorbereiden

Verwarm de oven voor op 200 graden. Breng water aan de kook in een steelpan voor de eieren. Snijd de rode ui in halve ringen. Verhit 1/2 el roomboter per persoon in een tweede steelpan op middellaag vuur. Bak hierin de rode ui 10 minuten. Blus de ui af met 1/4 el suiker en 1/2 el zwarte balsamicoazijn per persoon. Zet het vuur uit en laat staan tot serveren.

Kook ondertussen de eieren in 6 - 8 minuten hard. Laat ze schrikken onder koud water. Pel de eieren en snijd in plakken. Breng op smaak met peper en zout. Halveer de komkommer in de lengte. Verwijder met een theelepel de zaadlijsten en snijd beide helften in halve maantjes. Meng de komkommer in een kom met per persoon: 1/2 el wittewijnazijn en 1/4 el suiker.

Tip: Ei is een van de weinige ingrediënten bomvol vitamine D. Deze vitamine krijgen we gemiddeld te weinig binnen, terwijl we het hard nodig hebben voor de opname van calcium. Naast ei is ook vette vis rijk aan vitamine D.

Yoghurtsaus maken

Pluk de blaadjes van de takjes munt en snijd de blaadjes fijn. Pers de knoflook of snijd fijn. Meng in een kleine kom de yoghurt met de fijngesneden munt en knoflook. Breng flink op smaak met peper en zout. Verpak de tortilla's in aluminiumfolie en verwarm 2 - 3 minuten in de oven.

Tip: In de saus gebruik je rauwe knoflook. Vind je deze smaak te overheersend? Gebruik dan minder knoflook of laat achterwege.

Serveren

Serveer de zoetzure komkommer, plakjes ei, baba ganoush, yoghurt-muntsaus, rodekool en wortel, de gekaramelliseerde ui en de sesamzaadjes in aparte kommetjes. Zet deze allemaal op tafel zodat iedereen zijn eigen wraps kan maken. Verdeel de yoghurt-muntsaus over de mini-tortilla's. Beleg vervolgens met de komkommer, rodekool en wortel en plakjes ei. Schep de baba ganoush erbovenop. Garneer met het sesamzaad.
