BBQ spice rub

Chicken thigh strips

Preheat the oven to 200°C. Halve the cucumber lengthways and then cut into batons. Halve and pit the avocado, then slice the flesh. Crumble the feta.
Heat the sunflower oil in a frying pan over medium heat and fry the chicken thigh strips with the BBQ rub for 4-6 minutes. Season with salt and pepper.
Meanwhile, wrap the tortillas in aluminium foil and heat in the oven for 3 - 4 minutes.
Fill the wraps with the chicken, avocado, feta and cucumber. Finish with the arugula and lamb's lettuce. Drizzle with extra virgin olive oil as preferred.
