Cooking Steps

Prepare

  • Preheat the oven to 180°C. 
  • Slice the onion into half rings and crush or mince the garlic.
  • Slice the mushrooms.
Fry the vegetables

  • Heat a drizzle of olive oil in a large frying pan over medium-high heat. Fry the onion for 2 - 3 minutes. 
  • Add the mushrooms, garlic and Italian seasoning, then add the water and crumble in the stock cube (see pantry for amounts).
  • Mix well and fry for 5 - 6 minutes.
  • Deglaze with the balsamic vinegar and simmer for 1 more minute. Season to taste with salt and pepper.
Bake the pizzas

  • In the meantime, transfer the flatbread to a parchment-lined baking sheet and spread with the cream cheese.
  • Top with the cheese and the vegetables.
  • Bake in the oven for 10 minutes.
Serve

  • Dice the tomato in the meantime.
  • Top the flatbread pizzas with the arugula and the tomato. Season to taste with salt and pepper.
  • Finish with some extra virgin olive oil as preferred.
