- Preheat the oven to 180°C.
- Slice the onion into half rings and crush or mince the garlic.
- Slice the mushrooms.
- Heat a drizzle of olive oil in a large frying pan over medium-high heat. Fry the onion for 2 - 3 minutes.
- Add the mushrooms, garlic and Italian seasoning, then add the water and crumble in the stock cube (see pantry for amounts).
- Mix well and fry for 5 - 6 minutes.
- Deglaze with the balsamic vinegar and simmer for 1 more minute. Season to taste with salt and pepper.
- In the meantime, transfer the flatbread to a parchment-lined baking sheet and spread with the cream cheese.
- Top with the cheese and the vegetables.
- Bake in the oven for 10 minutes.
- Dice the tomato in the meantime.
- Top the flatbread pizzas with the arugula and the tomato. Season to taste with salt and pepper.
- Finish with some extra virgin olive oil as preferred.
