Cooking Steps

Prepare

  • Prepare the stock.
  • Finely chop the onion. 
  • Dice the carrot and bell pepper.
Make the soup

  • Heat a drizzle of olive oil in a pot over medium-high heat and fry the onion, bell pepper and carrot for 4 - 6 minutes.
  • Deglaze the pot with the balsamic vinegar, then add the Sicilian-style herbs and fry for 1 minute.
  • Add the tomatoes and the stock. Bring to a boil, then cover and let simmer for 5 - 10 minutes, or until the vegetables are tender.
Cook the tortelloni

  • Add the tortelloni to the pot and cook for 4 minutes.
  • Add the spinach and stir, allowing it to wilt and reduce.
  • Season to taste with pepper.
