• Breng in een pan met deksel ruim water aan de kook voor de verse udonnoedels • Snijd ondertussen de komkommer in blokjes en de bosui in ringen • Hak de verse koriander grof. Snijd de limoen in kwarten. Rasp de gember met een fijne rasp en pers of snijd de knoflook fijn. Snijd de avocado in blokjes

Saus maken

• Meng in een kom de pindakaas, de ketjap, de sambal, de knoflook, de gember en 1 el kokend water per persoon tot een mooie, dikke saus.

Noedels bereiden

• Kook de noedels in 3 minuten beetgaar. Giet daarna af • Voeg de saus toe aan de noedels en meng goed.

Serveren

• Verdeel de noedels over diepe borden en garneer met de komkommer, avocado, koriander, bosui, limoen, gezouten pinda's en eventueel met sambal naar smaak.
