Zoete aardappel koken

Verwarm de oven voor op 200 graden. Was of schil de zoete aardappel en snijd in blokjes van 2 bij 2 cm. Zet de zoete aardappelen onder water in een pan met deksel en kook, afgedekt, 5 minuten. Ze hoeven nog niet gaar te zijn. Giet af, en laat uitstomen zonder deksel.

Snipper de rode ui. Snijd de rode puntpaprika in reepjes. Giet de mais af. Meng in een grote kom de zwarte bonenpasta met per persoon: 1/2 zakje Mexicaanse kruiden en 1/4 el zonnebloemolie. Voeg de paprika, mais en de helft van de rode ui toe. Breng op smaak met peper en zout.

Tip: Mais is een goede bron van magnesium - belangrijk voor de vorming van bot en spieren. Andere magnesiumrijke ingrediënten zijn pinda's, peulvruchten, banaan, volkoren granen en cacao.

Ovenschaal beleggen

Vet een ovenschaal in met 1/4 el zonnebloemolie per persoon. Verdeel de zoete-aardappelblokjes over de bodem en bedek de zoete aardappel met de groenten. Garneer met de geraspte cheddar en bak 12 - 17 minuten in de oven, of totdat de cheddar goudbruin is gekleurd.

Salsa maken

Halveer de komkommer en verwijder de zaadlijsten. Snijd de komkommer in kleine blokjes. Verwijder de zaadlijsten van de groene peper en snijd hem fijn. Pers de limoen uit boven een kleine kom. Pluk de blaadjes van de munt en snijd deze met de bladpeterselie grof. Meng in een kom de komkommer met de groene peper en de kruiden. Breng op smaak met peper, zout en 1 tl limoensap per persoon. Verdeel de zoete aardappel en groenten over de borden. Serveer met de groene salsa en de crème fraiche.

Tip: Let op: de groene peper is pittig! Houd je niet van pittig of eten er kinderen mee? Gebruik dan naar smaak minder groene peper of houd apart.
