- Preheat the oven to 200°C (see Tip).
- Crush or mince the garlic.
- Transfer the pork to a bowl and lightly drizzle with olive oil, then add the ginger paste, the garlic, the soy sauce and the honey.
- Mix well to combine, then set aside to marinate for at least 15 minutes.
Tip: you'll use the oven later to heat the tortillas, but you can also do this in a frying pan instead. In this case, skip preheating the oven.
- In the meantime, slice the cucumber.
- In a bowl, combine the cucumber with the white wine vinegar, the sugar and a pinch of salt. Set aside, stirring occasionally.
- Deseed and finely chop the green chili pepper*.
- Dice the bell pepper.
*Take care, this ingredient is spicy! Use as preferred.
- Heat a drizzle of olive oil in a wok or deep frying pan over medium-high heat.
- Fry the bell pepper with the cabbage and half of the chili pepper for 7 minutes, seasoning to taste with salt and pepper.
- Add the ginger-stir fry sauce and fry for 1 more minute.
- Wrap the tortillas in aluminum foil and heat in the oven for 3 minutes.

- Heat a clean frying pan over medium-high heat and fry the pork in its marinade for 3 - 6 minutes, or until done.
- Fill the tortillas with the stir-fried vegetables, the pork and the quick-pickled cucumber.
- Garnish with the gomashio and the rest of the chili pepper as preferred.
