Cooking Steps

Roast the potatoes

  • Preheat the oven to 210°C.
  • Peel or thoroughly wash the potatoes and cut into 2cm chunks.
  • Transfer to a parchment-lined baking sheet, then drizzle with olive oil and scatter over the Italian seasoning. Season with salt and pepper, then toss well to coat.
  • Roast the potatoes for 25 - 35 minutes, tossing halfway.
Chop the vegetables

  • Cut the bell pepper into rough chunks and slice the onion into wedges.
  • Transfer the chicken, the bell pepper, the onion and the tomatoes to a bowl.
  • Drizzle with olive oil and scatter over the Sicilian-style herbs.
  • Season with salt and pepper, then toss well to coat.
