- Preheat the oven to 210°C.
- Peel or thoroughly wash the potatoes and cut into 2cm chunks.
- Transfer to a parchment-lined baking sheet, then drizzle with olive oil and scatter over the Italian seasoning. Season with salt and pepper, then toss well to coat.
- Roast the potatoes for 25 - 35 minutes, tossing halfway.
- Cut the bell pepper into rough chunks and slice the onion into wedges.
- Transfer the chicken, the bell pepper, the onion and the tomatoes to a bowl.
- Drizzle with olive oil and scatter over the Sicilian-style herbs.
- Season with salt and pepper, then toss well to coat.

- Transfer the vegetable mixture to a parchment-lined baking sheet.
- Roast in the oven for 12 - 15 minutes until done.
- Meanwhile, in a small bowl combine the basil crème with the extra virgin olive oil.
- In another small bowl, combine the honey with the balsamic vinegar.
- Serve everything on deep plates.
- Drizzle with the balsamic honey and the basil crème as preferred.
- Garnish with the cheese to finish.
