Cooking Steps

Voorbereiden

  • Breng ruim water aan de kook in een pan voor de rijst en kook de rijst 10 minuten. Giet daarna af en laat uitstomen.
  • Verhit een hapjespan met deksel zonder olie op hoog vuur en rooster de cashewstukjes goudbruin. Haal uit de pan en bewaar apart.
Curry maken

  • Verhit de zonnebloemolie in dezelfde hapjespan met deksel op middelhoog vuur. Voeg de mix van gember, knoflook en rode peper (let op: pittig! Gebruik naar smaak) toe en fruit 1 minuut. 
  • Voeg de groentemix toe en bak 3 minuten mee. Voeg de groene currykruiden toe en bak 1 minuut mee.
  • Voeg de kokosmelk en het water voor saus toe. Verkruimel 1/8 bouillonblokje per persoon boven de pan. Verlaag het vuur en laat, afgedekt, 4 - 5 minuten koken. 
Vis toevoegen

  • Snijd ondertussen de verse kruiden fijn. Snijd de limoen in 6 partjes.
  • Snijd de vis in stukken van maximaal 1 cm. Breng op smaak met peper en zout.
  • Roer de vis door de curry en verhit nog 1 - 2 minuten, of tot de vis gaar is.
  • Voeg de vissaus (let op: zout! Gebruik naar smaak) en het sap van 1 limoenpartje per persoon toe. Proef vervolgens de curry en breng eventueel op smaak met peper en zout.

  • Verdeel de rijst over de borden en schep de curry hierop.
  • Garneer met de verse kruiden en cashewstukjes. 
  • Serveer met de overige limoenpartjes.
