Cooking Steps

Fry the potatoes

  • Peel or thoroughly wash the potatoes and then cut into 1/2 cm thick slices.
  • Heat a drizzle of olive oil in a deep frying pan with a lid and fry the potatoes for 20 - 25 minutes over medium-high heat, tossing regularly. Take the lid off the pan after 10 minutes. Season with salt and pepper to taste.
  • In the meantime, slice the onion into half rings (see Tip).
  • Chop the pickles up finely.

Tip: if you like raw onion, keep some apart for the salad.

Prepare the chicken burgers

  • Heat a light drizzle of olive oil in a frying pan with a lid.
  • Fry the onion and bacon lardons for 3 minutes over medium-high heat.
  • Add the chicken meatballs, then use a spatula to flatten them into mini burgers.
  • Fry the onion, bacon and chicken burgers for 6 minutes.
Prepare the salad

  • In a small bowl, make a burger sauce by mixing 1/2 tsp chopped pickle with the tomato paste, mayonnaise and mustard (see pantry for amounts). Season with salt and pepper to taste.
  • Finely chop the little gem and cut the cherry tomatoes in half. Transfer both to a salad bowl, then mix with a drizzle of extra virgin olive oil. Season with salt and pepper to taste and stir well.
  • Scatter the grated cheese over the burgers. Put the lid on the pan and fry for 1 more minute so the cheese can melt.
Serve

  • Serve the salad and potatoes onto deep plates.
  • Serve the onion and bacon on top of the salad, followed by the mini burgers.
  • Drizzle the burger sauce over the salad.
  • Garnish with the sesame seeds, the rest of the pickle and some raw onion as preferred.
