Cooking Steps

Boil the noodles

  • Boil plenty of water in a pot or saucepan for the noodles and crumble in the stock cube (see pantry for amount).
  • Cut the scallions into thirds and dice the bell pepper.
  • Slice the shallot into half-rings.
  • Boil the noodles for 4 - 5 minutes until al dente, then drain and set aside.
Prepare the cucumber

  • Slice the cucumber into crescents and transfer to a bowl.
  • Add the white wine vinegar and the sugar, then season to taste with salt and pepper.
  • Mix well to combine, then set aside until serving, stirring occasionally.
  • Heat a drizzle of olive oil in a wok or deep frying pan over high heat. Fry the white part of the scallions with the bell pepper and shallot for 2 minutes.
Fry the fish

  • Add the black bean paste, the water for the sauce, the ginger paste, the honey and the rest of the scallions. Mix well and cook for 2 minutes.
  • Lower the heat, then allow to thicken and reduce for 2 minutes. 
  • Meanwhile, melt a knob of butter in a frying pan over medium-high heat. Fry the fish for 1 - 2 minutes per side. Season to taste with salt and pepper.
Serve

  • Serve the noodles in bowls. 
  • Top with the vegetables, the sauce and the fish.
  • Serve the cucumber alongside.
