  • Boil plenty of water in a pot or saucepan and cook the rice for 12 - 15 minutes, then drain and set aside.
  • Chop the eggplant in cubes of 1 cm. Cut the mushrooms into quarters.
  • Heat a drizzle of sunflower oil in a deep frying pan.
  • Fry the eggplant and mushrooms 4 - 5 minutes over high heat. Deglaze with a splash of water and add extra oil if needed.

  • In a small bowl, mix 1/2 tbsp of cornstarch per person with 1 tbsp of cold water per person. Mix well and set aside.
  • Grate the ginger.
  • Add the pork tenderloin to the frying pan and fry for 4 - 5 minutes. In the last 2 minutes, add the ginger.

  • Add East Asian-style sauce, soy sauce, ketjap and sambal to taste. Stir fry 1 - 2 minutes
  • Add 50 ml of water and crumble the stock cube into the deep frying pan.
  • Add the cornstarch mixture and mix well.
  • Add the bean sprouts and fry for 30 seconds.

  • Chop the chives finely. 
  • Serve the rice in deep plates and serve the veggies on the side.
  • Garnish with the chives and sesame seeds.
