Cooking Steps

Voorbereiden

Verwarm de oven voor op 200 graden. Verwarm een koekenpan, zonder olie, op middelhoog vuur en bak het spek in 5 - 6 minuten krokant. Haal uit de pan en bewaar apart. Halveer ondertussen de prei en snijd in dunne halve ringen. Snipper de ui. Pers de knoflook of snijd fijn. Rasp met een fijne rasp 1 mespuntje nootmuskaat per persoon.

Verhit in dezelfde koekenpan 1/2 el roomboter per persoon op gemiddeld vuur. Bak de ui, de knoflook en de prei 6 - 7 minuten.

Mengen

Meng in een grote kom 1 ei per persoon met de kaas, de zure room, de prei, het spek en de geraspte nootmuskaat. Breng op smaak met peper en zout.

Quiche maken

Verdeel het bladerdeeg over een quichevorm of ovenschaal met bakpapier. Druk het bladerdeeg goed aan en prik wat gaatjes in de bodem met een vork. Giet het prei-spekmengsel over het bladerdeeg en bak de quiche in 30 - 40 minuten gaar in de oven.

Tip: Past het deeg niet precies? Vouw of snijd het op de gewenste grootte of rol het nog wat verder uit tussen twee vellen bakpapier.

Maak in een saladekom een dressing van per persoon: 1 tl extra vierge olijfolie en 1/2 tl zwarte balsamicoazijn. Meng vlak voor serveren de slamix door de dressing. Breng op smaak met peper en zout..
