Sumac is a spice made from the dried red berries of the sumac plant. The flavour is fresh and sour like citrus, but a bit more herbal. Ideal for this dish!

- Preheat the oven to 200°C.
- Slice the onion into half rings. Cut the Romano pepper into thin rings. Dice the tomato.
- Juice half of the orange and then dice the rest. Finely chop the fresh herbs.
- In a bowl, combine the tomato with the diced orange and the extra virgin olive oil. Season to taste with salt and pepper, then set aside.
- Heat a drizzle of olive oil in a large deep frying pan over medium-high heat.
- Fry the onion with the Romano pepper and the Middle Eastern-style spices for 3 minutes.
- Add the mince to the vegetables and fry for 3 minutes, then taste and season with salt and pepper.
- Set aside until serving, covered to keep warm.
- In a small bowl, combine the water with a drizzle of olive oil (see pantry for amounts). Spread this over one side of the tortillas and then top with the za'atar.
- Transfer to a parchment-lined baking sheet and bake in the oven for 3 minutes.
- Meanwhile, in a bowl combine the cream cheese with two thirds of the sumac and 1.5 tbsp orange juice per person.
- Spread the empty side of the tortillas with the cream cheese.
- Serve all the toppings separately and allow everyone to fill their own tortillas.
- Garnish with the fresh herbs and the rest of the sumac. Drizzle with honey as preferred, then fold over the tortillas.
