- Add the heavy cream and powdered sugar to a mixing bowl.
- Mix with a handheld mixer until it forms stiff peaks.
- Transfer to the refrigerator and chill while preparing the pancakes.
- Combine the eggs and buttermilk in a large mixing bowl.
- Add the flour, baking powder and salt.
- Mix until just combined.
- Melt a knob of butter in a frying pan over medium-high heat.
- Pour a ladle full of batter into the pan.
- Fry the pancakes for about 2 minutes on each side until golden brown, then remove from the pan and cover with aluminium foil to keep warm.
- Melt a small knob of butter every time before frying the next pancake.
- Slice the strawberries.
- Serve the pancakes on plates.
- Top with the whipped cream and strawberries.
- Drizzle with honey to taste.
