Cooking Steps

  • Verwarm de oven voor op 200 graden.
  • Snijd de ui in halve ringen.
  • Snijd de paprika in reepjes.

  • Verhit de roomboter in een koekenpan op middelhoog vuur en bak de ui en paprika 2 - 3 minuten.
  • Voeg het gehakt en de helft van de Mexicaanse kruiden (let op: pittig! Gebruik naar smaak) toe en bak 3 - 4 minuten mee, of tot het gehakt gaar is. Breng op smaak met peper en zout.
  • Snijd ondertussen de tomaat in dunne plakjes.
  • Meng in een kleine kom de zure room met de overige Mexicaanse kruiden.

  • Leg de tortilla's op een bakplaat met bakpapier en verdeel het gehakt-groentemengsel over een helft van elke tortilla.
  • Verdeel de geraspte kaas over de tortilla's en beleg met 2 - 3 tomatenplakjes per tortilla. Vouw de andere helft van de tortilla over de belegde helft. Druk goed aan. Besprenkel de bovenkant van de quesadilla's met wat olijfolie naar smaak.
  • Bak de quesadilla's 5 - 7 minuten bovenin de oven, of tot ze goudbruin kleuren.

  • Snijd ondertussen de overige tomatenplakjes fijn en meng met de zure room. Breng op smaak met peper en zout.
  • Serveer de quesadilla's met de dipsaus.
