- Halve the cucumber widthways.
- Cut the feta, watermelon and half of the cucumber into similar-sized cubes of 2 cm thickness.
- Dice the other half of the cucumber into very tiny cubes and set aside to use as a garnish later.
- Mix two-thirds of the fresh basil and the extra virgin olive oil in a tall container using an immersion blender.
- Arrange the feta, watermelon and large-sized cucumber cubes onto two plates, alternating between the ingredients to create a colourful 'puzzle' per person.
- Garnish the 'puzzle' with the homemade basil oil, crema di balsamico, tiny cucumber cubes and the rest of the fresh basil.
- Season to taste with salt and pepper, then serve.
