Luxe caesarsalade met kip

Met spek, ansjovis en croutons

Caesar salad is een klassieke salade die vooral in de Verenigde Staten al decennialang populair is. Over de herkomst van de naam wordt veel gespeculeerd, maar de salade is waarschijnlijk vernoemd naar restauranteigenaar Caesar Cardini. Volgens de overlevering maakte hij de salade uit nood: meer ingrediënten waren er door drukte niet op voorraad. Alhoewel de originele versie vrij simpel is, wordt aan deze salade tegenwoordig vaak, zoals in dit recept, kip, spek en ansjovis toegevoegd.

Cooking Steps

Kip en spek bakken

Verhit de olijfolie in een koekenpan op middelmatig vuur. Bak de kipfilet 5 – 6 minuten per kant goudbruin en gaar. Bak de ontbijtspek de laatste 5 minuten mee. Haal de kip uit de pan en laat rusten onder aluminiumfolie. Bewaar het ontbijtspek apart.

Bonen en eieren koken

Breng ondertussen een bodempje water aan de kook in een pan met deksel voor de sperziebonen. Verwijder de steelaanzet van de sperziebonen en was de eieren grondig. Leg de eieren en de sperziebonen in de pan en kook ze samen 5 – 6 minuten.

Dressing maken

Pers ondertussen de knoflook of snijd fijn. Laat de ansjovis uitlekken (bewaar de olie!) en snijd de helft fijn. Houd de overige ansjovis heel. Pers de helft van de citroen uit en snijd de overige citroen in parten. Meng in een kleine kom de mayonaise met de knoflook, de fijngesneden ansjovis en 1 tl citroensap per persoon. Breng op smaak met peper.

Croutons bakken

Snijd de witte ciabatta in blokjes. Voeg de ansjovisolie toe aan de koekenpan en verhit op middelhoog vuur. Bak de witte ciabatta in ongeveer 5 minuten tot goudbruine croutons. Roer regelmatig zodat de croutons niet aanbranden!

Snijd ondertussen de romaine sla grof. Snijd de kip in plakken. Snijd de eieren in parten. Rasp de parmigiano reggiano grof.

Serveren

Meng in een saladekom waarin je het gerecht gaat serveren de romaine sla met de sperziebonen en de croutons. Verdeel de parten ei erover en garneer met de dressing en de parmigiano reggiano. Leg de ansjovis erop, verdeel het ontbijtspek erover en leg de gesneden kipfilet in het midden. Breng op smaak met peper en eventueel zout. Serveer met de citroenparten.
