  • Breng ruim water met 1/4 bouillonblokje per persoon aan de kook in een pan voor de rijst.
  • Kook de rijst 6 minuten. Voeg de sperziebonen toe en kook nog 4 - 6 minuten. Giet daarna af en laat uitstomen.
Curry maken

  • Verhit de zonnebloemolie in een hapjespan met deksel op middelhoog vuur. Bak de gesneden ui, het kerriepoeder en de gemberpuree 2 - 3 minuten.
  • Pers ondertussen de knoflook of snijd fijn. Voeg de knoflook toe en bak 1 minuut mee.
  • Voeg de tomatenblokjes, kokosmelk en suiker toe. Breng aan de kook en laat 5 minuten sudderen. Breng op smaak met peper en zout.
Vis garen

  • Bestrooi de vis met de Peruaanse kruiden.
  • Leg de vis in de hapjespan. Zorg ervoor dat de vis volledig onder de saus staat.
  • Laat de vis, afgedekt, 2 - 3 minuten in de saus garen.
  • Snijd ondertussen de korianderblaadjes grof.
