Cooking Steps

Make the wedges

Preheat the oven to 220°C. Thoroughly wash the potatoes and cut them into wedges. Pat them dry with kitchen paper, then transfer to a bowl and drizzle with olive oil (see Tip). Season with salt and pepper, then toss well to coat.

Tip: to save time washing up, you can also do this directly on the baking sheet.

Transfer the potatoes to a parchment-lined baking sheet and bake in the oven for 30 - 35 minutes, tossing halfway. In the meantime, discard the tips of the green beans and then cut into thirds. Chop the onion. Slice the courgette into crescents. 

Cook the green beans

Transfer the green beans to a pot or saucepan and cover with a shallow layer of water. Add a pinch of salt and cover with the lid, then bring to the boil and allow to cook gently for 6 - 8 minutes. Drain and set aside.

Fry the turkey breast

Meanwhile, melt a knob of butter in a deep frying pan over medium-high heat. Fry the turkey for 2 - 3 minutes per side. Add the cream and allow to cook gently for 6 - 8 minutes. Turn off the heat and stir in the basil crème.

Fry the vegetables

Heat a drizzle of olive oil in a frying pan over medium-high heat. Fry the onion and courgette for 4 minutes, then add the green beans and fry for 2 more minutes. Season to taste with salt and pepper.

Serve

Serve the turkey in its sauce on plates. Serve the potato wedges and the vegetables alongside.
