Cooking Steps

Rijst koken

  • Breng ruim water met 1/2 bouillonblokje per persoon aan de kook in een pan.
  • Kook de rijst 12 - 15 minuten op middelhoog vuur (zie Tip).
  • Giet daarna af en laat uitstomen.

Gezondheidstip: Deze maaltijd is calorierijk. Let jij op je calorie-inname? Kook dan alle rijst, maar gebruik 2/3. De overige rijst kun je de volgende dag in een lunchsalade verwerken.

  • Snipper de ui en snijd de courgette in halve maantjes.
  • Verhit 1/2 el olijfolie per persoon in een koekenpan op middelhoog vuur en bak de ui en courgette 3 - 4 minuten. 
  • Laat de mais uitlekken in een vergiet. Voeg de mais.en de Mexicaanse kruiden (let op: pittig! Gebruik naar smaak) toe aan de koekenpan.
  • Meng goed door en bak de mais nog 2 - 3 minuten mee. 
Vis bereiden

  • Maak ondertussen een kleine opening in de zak met tortilla's. Stamp de tortillachips in kleine stukjes en voeg toe aan een diep bord.
  • Dep de vis droog met keukenpapier. Breng op smaak met peper en zout.
  • Besmeer de vis met de mayonaise, maar houd een klein beetje mayonaise apart voor de saus. Wentel de vis door de tortillachips. Zorg ervoor dat vis volledig bedekt is met de tortillachips.
  • Verhit 1/2 el roomboter per persoon in een tweede koekenpan op middelhoog vuur en bak de vis 1 - 2 minuten per kant.
Serveren

  • Snijd de koriander fijn. 
  • Meng in een kleine kom de helft van de koriander met de overige mayonaise en 1/2 tl wittewijnazijn per persoon. Breng op smaak met peper en zout.
  • Verdeel de rijst en groenten over kommen of diepe borden. Serveer de vis erbovenop.
  • Serveer met de koriandermayonaise en garneer met de overige koriander.
