Cooking Steps

  • Heat a drizzle of olive oil in a large frying pan over medium-high heat while cutting the onion into thin rings. 
  • Fry the onions for 2 minutes.
  • Prepare the stock [see pantry for amounts of water and stock cube] in a salad bowl and add the sicilian herbs and the couscous. Mix well. Cover and allow to stand for 10 minutes. Then generously season with salt and pepper. 
  • Move the onions to the side of the pan and place the meatballs in the middle. Cut the meatballs in half with your spatula, add a splash of water to the pan, then fry with a lid for 4 - 5 minutes.

  • In the meantime, dice the cucumber and drain and rinse the lentils.  
  • In a large salad bowl, combine black balsamic vinegar with extra virgin olive oil to taste. Add the spinach and mix well.
  • Remove the lid from the meatballs, drizzle the meatballs and onion with some honey and fry for 2 - 3 more minutes to reduce, and until evenly browned. Season with salt and pepper.

  • Add the lentils and BBQ spice rub to the salad bowl and mix well.
  • Last, add the couscous and cucumber to the bowl and combine with everything. Season with salt and pepper. 
  • In the meantime, in a small bowl mix the tzatziki with 1 tbsp of water per person.

  • Serve the couscous lentil salad on plates. Crumble on top the white cheese and garnish with the dille.
  • Serve the meatballs in their jus on the side.
  • Drizzle the tzatziki over everything.
