Verwarm de oven voor op 220 graden.Laat de zuurkool goed uitlekken in een vergiet. Snijd de rode ui in halve ringen en de appel in blokjes.Bak de spekblokjes 2 minuten aan in een koekenpan zonder olie, op middelhoog vuur. Ze hoeven nog niet knapperig te zijn.Voeg de rode ui en appel toe aan de koekenpan en bak nog 2 minuten.

Meng in een kom de zure room met de geraspte belegen kaas, de zuurkool, peper en zout. Leg de flammkuchen op een bakplaat met bakpapier.Beleg met het zuurkoolmengsel en de gebakken appel, spekjes en rode ui. Breng op smaak met peper en zout.Bak de flammkuchen 8 - 10 minuten in de oven.

Salade maken

Meng in een saladekom per persoon: 1/2 el extra vierge olijfolie, 1/2 el witte balsamicoazijn en 1 tl honing. Breng op smaak met peper en zout. Meng de rucola en veldsla met de dressing. Hak de walnoten grof en voeg toe aan de salade. Snijd de bladpeterselie fijn.

Garneer de flammkuchen met de bladpeterselie en snijd in stukken. Serveer met de salade.
