Cooking Steps

1
  • Boil plenty of water in a pot or saucepan for the noodles.
  • Discard the top of the kohlrabi, then peel and dice it into 1cm cubes.
  • Melt a knob of butter in a deep frying pan over medium-high heat and fry the kohlrabi for 4 - 6 minutes.
  • Deglaze with a splash of water, then cover with the lid and allow to stew gently for 8 - 10 minutes, adding more water if necessary. Remove the lid during the final 2 minutes of cooking time.
2
  • Meanwhile, cut the radishes into small wedges.
  • Use a sharp knife to remove the skin and the white pith from the orange and then dice the flesh. Do this over a bowl to catch all the juice for the dressing.
  • Squeeze any excess juices from the oranges after they have been segmented.
  • Crush or mince the garlic. Deseed and finely chop the red chili pepper. Chop the coriander.
3
  • Heat a drizzle of olive oil in a deep frying pan over medium-high heat and fry the chicken thigh stripswith the garlic and red chili pepper for 7 - 8 minutes.
  • Then add the East-Asian style sauce, soy sauce, orange juice, a splash of vinegar and mix well.
  • Boil the noodles for 4 - 5 minutes until al dente. Reserve some of the cooking liquid, then drain.
  • Add the noodles and kohlrabi to the pan with the chicken and add cooking liquid as preferred. Season to taste with salt and pepper.
4
  • Serve the noodles and chicken in bowls and top with the orange, radish, coriander and peanuts.
