Cooking Steps

Prepare

  • Peel or thoroughly wash the potatoes and then cut them into rough pieces. Transfer to a pot or saucepan and cover with the water (see pantry for amount).
  • Add a pinch of salt and cover with the lid, then bring to the boil and allow to cook gently for 12 - 14 minutes. 
  • Drain the potatoes and return them to the pot, then add half of the butter and fry for 2 - 3 minutes over medium-high heat.
Boil the broccoli

  • Boil plenty of salted water in a pot or saucepan.
  • Cut the head of the broccoli into florets and dice the stem.
  • Boil the broccoli for 5 - 7 minutes, then drain and set aside.
  • Finely chop the onion in the meantime.

Fry the vegan schnitzel

  • Melt the rest of the butter in a frying pan over medium-high heat (or use multiple pans as necessary if cooking for more people).
  • When the butter is nice and hot, fry the schnitzel for 3 - 4 minutes per side or until golden-brown.
  • In a salad bowl, combine the potatoes with the mayonnaise, mustard, onion and pickles. Season to taste with salt and pepper.
Serve

  • Drizzle the broccoli with extra virgin olive oil as preferred, then add the gomashio-herb mix and season to taste with salt and pepper. Mix well to combine. 
  • Serve the schnitzel with the broccoli and the potato salad alongside.
