- Heat a drizzle of olive oil in a frying pan over medium-high heat and fry the potatoes for 8 minutes until golden-brown.
- Add the curry seasoning and a light drizzle of olive oil, and fry for another minute (see Tip). Season to taste with salt and pepper.
Health Tip: This recipe is high in calories. If you're watching your calorie intake, serve the hamburger without the potatoes/fries. You can keep them aside to use at another time.
- Melt a generous knob of butter in a second frying pan over medium-high heat.
- When the butter is nice and hot, fry the fish burger for 3 minutes on each side until evenly golden-brown.
- Meanwhile, mix the mayonnaise, sugar, and white wine vinegar in a salad bowl.
- Thinly slice the cucumber.
- Finely chop the coriander.
- Transfer the slaw mix, coriander and cucumber to the salad bowl and toss to combine.
Did you know... cucumbers are low in calories and mostly made up of water, but they still contain vitamins and minerals. They're a great way to stay hydrated and get your essential nutrients at the same time.
- Slice the hamburger buns in half and spread each side with some sriracha mayo (see Tip).
- Top the buns with some salad and the crispy fish burger.
- Serve with the diced potatoes, the rest of the salad and mayo to taste.
Tip: If you'd like the sriracha mayo to be spicier, add extra sriracha or sambal as preferred (if you have it).
