Voorbereiden

Was en schil de aardappelen en snijd in grove stukken. Snijd de harde onderkant van de spruiten. Houd 2 spruiten per persoon apart. Halveer de overige spruiten. Snijd de prei in ringen. Zorg dat de spruiten en aardappelen net onder water staan in een pan met deksel, voeg een flinke snuf zout toe en kook, afgedekt, in 12 - 15 minuten gaar.

Voeg de laatste 2 - 3 minuten de prei-ringen toe aan de pan met deksel en kook mee met de aardappelen. Giet daarna af en houd afgedekt warm. Verhit een koekenpan met deksel zonder bakvet op middelhoog vuur en bak de spekreepjes in 3 - 4 minuten goudbruin. Snijd ondertussen de apart gehouden spruitjes door de helft en vervolgens in halve ringen. Haal de spekjes met een schuimspaan uit de pan en houd apart.

Stamppot maken

Voeg 1/2 el roomboter per persoon toe aan de koekenpan en bak de worst in 3 - 4 minuten rondom bruin. Dek vervolgens de koekenpan af en bak de worst 10 - 12 minuten. Voeg de laatste 7 minuten de gesneden spruiten toe. Blijf af en toe omscheppen zodat ze niet aanbranden. Voeg aan de aardappelen en groenten per persoon: een scheutje melk, 1 tl grove mosterd en 1/2 tl Belgische gehaktkruiden toe. Stamp met een aardappelstamper tot een grove puree. Breng op smaak met peper en zout. Meng als laatste de spekjes door de stamppot.

Verdeel de stamppot over de borden. Serveer met de worst. Garneer met de knapperige gebakken spruiten. Serveer de piccalilly ernaast.

Tip: Spruitjes zijn rijk aan calcium voor sterkte botten en tanden, ijzer voor je energieniveau, vitamine E voor een sterk immuunsysteem en vezels voor gezonde darmen.
