Cooking Steps

Prepare

  • Discard the tips of the green beans and then cut into thirds.
  • Transfer the green beans to a pot or saucepan and submerge with a shallow layer of water.
  • Add a pinch of salt and cover with the lid, then bring to the boil and allow to cook gently for 4 - 6 minutes until al dente. Drain if necessary and set aside.
  • Meanwhile, dice the bell pepper.
Fry the gnocchi

  • Heat a drizzle of olive oil in a frying pan over medium-high heat. Fry the gnocchi for 6 - 8 minutes, leaving it mostly undisturbed so as to allow the gnocchi to turn golden-brown.
  • Heat a large clean deep frying pan over medium heat and fry the bacon with the chorizo for 3 - 4 minutes.
  • Add the green beans and the bell pepper, then fry for 2 - 3 minutes.
Make the sauce

  • Add the smoked paprika and fry for 1 more minute.
  • Deglaze with the balsamic vinegar, then add the chopped tomatoes and the sugar.
  • Crumble in the stock cube and allow to simmer until serving (see Tip). Season to taste with salt and pepper.
  • Meanwhile, finely chop the fresh herbs.

Health Tip: if you're watching your salt intake, omit the stock cube.

Serve

  • In a small bowl, combine the sour cream with half of the fresh herbs, then season to taste with salt and pepper.
  • Transfer the gnocchi to the sauce and mix well to combine (or serve separately if preferred).
  • Serve the gnocchi on deep plates and top with the sour cream.
  • Garnish with the rest of the fresh herbs.
