Due to the different suppliers we purchase our products from, nutritional facts per meal can vary from the website to what is received in the delivered box, depending on your region.
- Discard the tips of the green beans and then cut into thirds.
- Transfer the green beans to a pot or saucepan and submerge with a shallow layer of water.
- Add a pinch of salt and cover with the lid, then bring to the boil and allow to cook gently for 4 - 6 minutes until al dente. Drain if necessary and set aside.
- Meanwhile, dice the bell pepper.
- Heat a drizzle of olive oil in a frying pan over medium-high heat. Fry the gnocchi for 6 - 8 minutes, leaving it mostly undisturbed so as to allow the gnocchi to turn golden-brown.
- Heat a large clean deep frying pan over medium heat and fry the bacon with the chorizo for 3 - 4 minutes.
- Add the green beans and the bell pepper, then fry for 2 - 3 minutes.
- Add the smoked paprika and fry for 1 more minute.
- Deglaze with the balsamic vinegar, then add the chopped tomatoes and the sugar.
- Crumble in the stock cube and allow to simmer until serving (see Tip). Season to taste with salt and pepper.
- Meanwhile, finely chop the fresh herbs.
Health Tip: if you're watching your salt intake, omit the stock cube.
- In a small bowl, combine the sour cream with half of the fresh herbs, then season to taste with salt and pepper.
- Transfer the gnocchi to the sauce and mix well to combine (or serve separately if preferred).
- Serve the gnocchi on deep plates and top with the sour cream.
- Garnish with the rest of the fresh herbs.
