Cooking Steps

Fry the potatoes

  • Heat a drizzle of olive oil in a deep frying pan over medium-high heat and fry the potatoes for 5 – 7 minutes, covered.
  • Remove the lid and fry for 5 more minutes.
  • Season to taste with salt and pepper.
Fry the courgette

  • Slice the courgette into crescents.
  • Heat a drizzle of olive oil in another frying pan over medium-high heat.
  • Fry the courgette for 3 - 4 minutes, or until done (see Tip). 
  • Remove the courgette from the pan and set aside to cool down.

Tipyou can also grill the courgette if preferred.

Fry the 'fish' fingers

  • Heat a drizzle of olive oil in a frying pan over medium heat.
  • Fry the 'fish' fingers for 3 minutes per side, or until golden-brown.
Make the dressing

  • Dice the tomato in the meantime.
  • In a salad bowl, combine the honey with the extra virgin olive oil and the mustard.
  • Season to taste with salt and pepper.

Make the salad

  • Transfer the tomato, the lettuce and the courgette to the salad bowl.
  • Toss well to combine with the dressing (see Tip).

Tipmake sure the courgette has cooled down before adding it to the salad.

  • Serve the potatoes on plates with everything else alongside.
  • Serve with the ravigote sauce.
