Cooking Steps

Chop the vegetables

  • Boil plenty of water with a pinch of salt in a pot or saucepan, then boil the pasta for 10 - 12 minutes. Drain and set aside when finished, saving some pasta water.
  • Finely chop the onion. Crush or mince the garlic.
  • Chop the leek into thin half rings. Chop the carrot into crescents.
  • Cut the cherry tomatoes in half.
Prepare the sauce

  • Heat a deep frying pan with a light drizzle of olive oil. Fry the onion, half of the garlic, Italian herbmix, leek and carrot for 4 - 6 minutes over medium-high heat. Deglaze with the balsamic vinegar.
  • Add the vegan mince and fry for 2 - 3 minutes.
  • Add the tomato paste, Sicilian-style herb mix and BBQ spice rub*. Fry for 1 - 2 minutes.
  • Add the stock cube and water (see pantry for amounts). Cover the pan and simmer for 8 - 10 minutes (see Tip). Season with salt and pepper.

*Take care, this ingredient is spicy! Use as preferred.
Tip: add some more water if the sauce is too dry.

  • Add the cherry tomatoes to the sauce and simmer for 2 - 4 minutes.
  • Heat a small frying pan over medium-high heat. Add a light drizzle of olive oil and toast the breadcrumbs, shaved almonds and the rest of the garlic for 1 - 2 minutes until golden brown. Season with salt and pepper.
  • Pull the basil leaves off the stems, but leave them whole. Stir half of the basil into the sauce.
Serve

  • Add the pasta to the sauce and add some of the pasta water if needed. Season with salt and pepper.
  • Serve on deep plates and scatter over the crispy breadcrumbs and shaved almonds.
  • Garnish with the rest of the basil.
