Cooking Steps

  • Verwarm de oven voor op 200 graden.
  • Snijd het broodje open en besprenkel de snijkanten met de olijfolie.
  • Leg de broodjes op een bakplaat met bakpapier en rooster 6 - 8 minuten in de oven.

  • Halveer de avocado en verwijder de pit en schil. Prak het vruchtvlees met een vork in een kleine kom.
  • Rasp de schil van de citroen met een fijne rasp en pers de helft van de citroen uit. Snijd de andere helft van de citroen in 4 partjes.
  • Voeg het citroensap en 2 tl Midden-Oosterse kruiden toe aan de avocado en meng goed.
  • Breng goed op smaak met peper en zout.

  • Rol de granaatappel al duwend over het aanrecht zodat je de pitjes hoort kraken. Snijd de granaatappel doormidden en haal de granaatappelpitjes uit de schil.
  • Hak de pistachenoten grof.
  • Meng in een kleine kom de citroenrasp met 2 el extra vierge olijfolie.

  • Verdeel de toasts over 2 borden en beleg met smashed avocado.
  • Verkruimel de witte kaas.
  • Bestrooi de toasts met witte kaas, granaatappelpitjes en gehakte pistachnoten. 
  • Besprenkel tot slot met de citroenolie en garneer met een citroenpartje.
