•Tall-Sided Pan
- Slice the leek into thin rings.
- Chop the onion into half rings.
- Press or mince the garlic.
- Heat a clean large wok or deep frying pan over high heat. Toast the pumpkin seeds for 1 - 2 minutes, or until they start to pop, then remove from the pan and set aside.
- Heat a drizzle of olive oil in the same wok or deep frying pan over medium-high heat and fry the leek, onion and garlic for 2 - 3 minutes.
- Heat a drizzle of olive oil in a frying pan over medium-high heat and fry the salmon for 2 - 3 minutes on its skin.
- Turn the salmon over and fry for 2 minutes on the other side.
- Gradually add the spinach to the onion and leek and let it wilt down.
- Add the cream cheese and crumble in the stock cube (see pantry for amount), then cook for 1 - 2 minutes over medium-high heat (see Tip).
- Season with salt and pepper to taste.
Tip: feel free to add some water if the sauce seems too thick.
- Serve the spinach and sauce on deep plates.
- Garnish with the basil crème and pumpkin seeds.
- Serve the salmon on top.
