Cooking Steps

Prepare

  • Slice the leek into thin rings.
  • Chop the onion into half rings.
  • Press or mince the garlic.
  • Heat a clean large wok or deep frying pan over high heat. Toast the pumpkin seeds for 1 - 2 minutes, or until they start to pop, then remove from the pan and set aside.
Fry the salmon

  • Heat a drizzle of olive oil in the same wok or deep frying pan over medium-high heat and fry the leek, onion and garlic for 2 - 3 minutes.
  • Heat a drizzle of olive oil in a frying pan over medium-high heat and fry the salmon for 2 - 3 minutes on its skin.
  • Turn the salmon over and fry for 2 minutes on the other side.
Finish the sauce

  • Gradually add the spinach to the onion and leek and let it wilt down.
  • Add the cream cheese and crumble in the stock cube (see pantry for amount), then cook for 1 - 2 minutes over medium-high heat (see Tip).
  • Season with salt and pepper to taste.

Tip: feel free to add some water if the sauce seems too thick.

  • Serve the spinach and sauce on deep plates. 
  • Garnish with the basil crème and pumpkin seeds.
  • Serve the salmon on top.
