Cooking Steps

Prepare

  • Preheat the oven to 180°C.
  • Slice the leek into thin rounds and the carrot into thin crescents.
  • Melt a knob of butter in a frying pan over medium-high heat. Fry the leek and the carrot for 4 - 6 minutes, then transfer to an oven dish.
  • Meanwhile, slice the onion into thin half-rings.
Fry the onion

  • Melt another knob of butter in the same pan over medium heat and fry the onion for 1 - 2 minutes.
  • Add the paprika and fry for another 1 - 2 minutes.
  • Deglaze with the white balsamic vinegar, then stir in the cream and allow to reduce for 4 - 5 minutes.
  • Season to taste with salt and pepper.
Assemble

  • Cut the tomato into wedges and transfer to the oven dish.
  • Pat the fish dry with kitchen paper and season with salt and pepper.
  • Place the fish on top of the vegetables, then pour over the cream sauce and scatter over the cheese
  • Bake in the oven for 20 - 25 minutes, or until the fish is done.
Boil the potatoes

  • Boil plenty of water in a pot or saucepan.
  • Peel or thoroughly wash the potatoes and cut them into rough pieces.
  • Boil the potatoes for 12 - 15 minutes, covered.
  • Reserve some of the cooking liquid, then drain and set aside.
Mash the potatoes

  • Mash the potatoes with a knob of butter and a splash of milk or cooking liquid as preferred.
  • Stir in the mustard and season to taste with salt and pepper.
Serve

  • Serve the gratin with the mashed potatoes alongside.
