Cooking Steps

Walnoten roosteren
1

Bereid de bouillon. Snipper de sjalot en hak de walnoten grof. Verhit een kook- of hapjespan op hoog vuur en rooster de walnoten, zonder olie, tot ze beginnen te kleuren. Haal uit de pan en bewaar apart.

Verhit de roomboter in dezelfde pan en fruit de sjalot 1 – 2 minuten op middelhoog vuur. Voeg de risottorijst toe en bak al roerend 1 minuut. Voeg 1/3 van de bouillon toe en laat de rijstkorrels de bouillon langzaam opnemen. Roer regelmatig door.

Risotto maken

Voeg zodra de bouillon door de risottokorrels is opgenomen weer 1/3 van de bouillon toe en herhaal dit met de rest van de bouillon. De risotto is gaar zodra de korrel van buiten zacht is en nog een lichte bite heeft vanbinnen. Dit duurt ongeveer 20 – 25 minuten. Voeg eventueel extra water toe om de korrel nog verder te garen.

Rasp ondertussen de gekookte biet met een grove raspt en kook hem de laatste 5 minuten mee met de risotto. Verkruimel de feta en snijd de munt in fijne reepjes.

Meng de helft van de feta door de risotto, roer door tot alles gesmolten is en breng op smaak met peper en zout.

Serveren

Verdeel de veldsla over de borden, schep de risotto erop en garneer met de walnoten en de overige feta. Bestrooi met de munt en besprenkel eventueel met extra vierge olijfolie naar smaak.
