- Preheat the oven to 220°C.
- Transfer the baby potatoes and the curry powder to a bowl, then drizzle with olive oil. Season with salt and pepper, then toss well to coat.
- Transfer to a parchment-lined baking sheet and roast in the oven for 16 - 20 minutes.
- Slice the onion into half-rings and shape the mince into 1 burger patty per person.
- Melt a knob of butter in a frying pan over medium-high heat. Fry the onion with the burger for 3 - 4 minutes per side, or until done.
- Add the onion chutney and fry for 1 more minute.
- Dice the cucumber and half of the tomato, then transfer both to a salad bowl.
- Drizzle with extra virgin olive oil as preferred, then season to taste with salt and pepper.
- Deseed and roughly chop the green chili pepper* and transfer to a tall container.
- Add the white wine vinegar, the coriander and the mayonnaise.
- Season with salt and pepper, then use an immersion blender to process into a smooth sauce.
- Meanwhile, bake the naan in the oven for 3 - 4 minutes.
*Take care, this ingredient is spicy! Use as preferred.
- Slice the rest of the tomato.
- Spread the naan with the mayonnaise sauce, then top with the sliced tomato, the burger and the onion. Crumble over the cheese.
- Fold the top of the naan over so as to make the naanwich.
- Serve the potatoes and the salsa alongside.
