- Preheat the oven to 220°C.
- Transfer the chicken wings to one side of a parchment-lined baking sheet, drizzle lightly with olive oil and season with two-thirds of the BBQ rub, salt and pepper.
- Roast in the oven for 5 minutes.
- Meanwhile, thoroughly wash the potatoes and cut into 1 cm fries.
- Place on the other side of the baking tray, drizzle with olive oil, and season with the dried oregano, salt and pepper.
- Return everything to the oven and roast for another 25 - 30 minutes, until the chicken is golden brown and cooked through. Turn the wings halfway through cooking.
- Meanwhile, cut the lemon into 6 wedges.
- Finely chop the dill and chives.
- Cut the cucumber into crescents.
- Cut the tomatoes into wedges.
- In a salad bowl, the mustard with extra virgin olive oil to taste and half of the chopped herbs. Season with salt and pepper.
- Add the cucumber and tomatoes and mix.
- In a small bowl, mix the yogurt with the water for the sauce and mayonnaise (see pantry for amounts).
- Add lemon juice to taste, the rest of the chopped herbs and season with salt and pepper. Mix well to combine (see Tip).
Health Tip: This recipe is high in calories. Are you watching your calorie intake? Prepare all of the sauce but then just serve half. You can keep the rest of it in the fridge to use the next day.
