- Crush or mince the garlic.
- Heat a drizzle of olive oil in a large wok or deep frying pan over medium-high heat and fry the garlic for 1 minute.
- Add the mince and fry for 3 more minutes, separating it as you do so.
- Stir in the vegetable mix and fry for 4 - 6 more minutes.
- Stir in the mascarpone, the teriyaki sauce and the soy sauce, then add the udon noodles and cook for 3 more minutes.
- Season to taste with salt and pepper.
- Roughly chop the fresh herbs in the meantime.
- Serve the udon noodles on deep plates.
- Garnish with the peanuts and the fresh herbs.
