- Preheat the oven to 220°C.
- Cut the head of the cauliflower into florets and dice the stem.
- Chop the onion into wedges.
- Drain the corn.
- Thoroughly wash the potatoes and cut into wedges, then transfer to a bowl together with the cauliflower and the corn and drizzle with olive oil. Add the toasted onion powder and season with salt and pepper, then toss well to coat.
- Transfer the veggies to a parchment-lined baking sheet. Add the onion wedges on one side and bake in the oven for 25 - 35 minutes, or until golden-brown.
- In a small bowl, mix the panko with the grated cheese, together with a drizzle of olive oil. Season with salt and pepper.
- Divide the panko topping in the last 8 - 10 minutes over the veggies, or until golden-brown.
- Crush or mince the garlic.
- Finely chop the chives.
- Mix in a bowl the yoghurt with the garlic, chives, the Hello Harissa, the honey with a drizzle of olive oil. Season with salt and pepper.
- Heat a clean frying pan over high heat and toast the pumpkin seeds until they start to pop. Remove from the pan and set aside.
- Divide the potatoes and vegetables onto plates.
- For the parents: serve the onion next to the veggies.
- Drizzle over the yoghurt-dressing.
- Scatter over the pumpkin seeds.
