Instructies

  • Preheat the oven to 220°C.
  • Cut the head of the cauliflower into florets and dice the stem.
  • Chop the onion into wedges.
  • Drain the corn.

  • Thoroughly wash the potatoes and cut into wedges, then transfer to a bowl together with the cauliflower and the corn and drizzle with olive oil. Add the toasted onion powder and season with salt and pepper, then toss well to coat. 
  • Transfer the veggies to a parchment-lined baking sheet. Add the onion wedges on one side and bake in the oven for 25 - 35 minutes, or until golden-brown.

  • In a small bowl, mix the panko with the grated cheese, together with a drizzle of olive oil. Season with salt and pepper. 
  • Divide the panko topping in the last 8 - 10 minutes over the veggies, or until golden-brown.

  • Crush or mince the garlic.
  • Finely chop the chives.
  • Mix in a bowl the yoghurt with the garlic, chives, the Hello Harissa, the honey with a drizzle of olive oil. Season with salt and pepper.

  • Heat a clean frying pan over high heat and toast the pumpkin seeds until they start to pop. Remove from the pan and set aside.

  • Divide the potatoes and vegetables onto plates.
  • For the parents: serve the onion next to the veggies.
  • Drizzle over the yoghurt-dressing.
  • Scatter over the pumpkin seeds.
