Cooking Steps

Voorbereiden

  • Verwarm de oven voor op 200 graden.
  • Laat de mais uitlekken in een vergiet. Snipper de ui. Snijd de tomaat in blokjes. Snijd de wortel in zeer kleine blokjes. 
  • Verhit de olijfolie in een koekenpan op middelhoog vuur. Bak de wortel, mais en 2/3 van de ui 1 - 2 minuten (zie Tip). 
  • Voeg het kipgehakt en de Mexicaanse kruiden (let op: pittig! Gebruik naar smaak) toe en bak in 2 - 3 minuten los. Voeg de passata en de helft van de tomatenblokjes toe en bak nog 2 - 4 minuten mee.

Tip: Je gebruikt een deel van de ui rauw in de salsa. Houd je hier niet van? Bak dan alle ui mee in deze stap.

  • Beleg de tortilla's met het gehakt-passatamengsel.
  • Vouw de tortilla's dicht en leg ze naast elkaar in een ovenschaal.
  • Strooi de cheddar over de tortilla's en bak 5 - 10 minuten in de oven.

Weetje: Mais levert een goede portie magnesium - een belangrijk mineraal voor de vorming van bot en spieren. Andere magnesiumrijke producten zijn pinda's, peulvruchten, banaan, volkoren granen en cacao.

Salsa maken

  • Snijd de limoen in partjes. 
  • Meng in een kleine kom de overige tomatenblokjes en 1/3 van de ui met het sap van 1 limoenpartje per persoon. 
  • Breng op smaak met extra vierge olijfolie, peper en zout.
