Cooking Steps

  • Preheat the oven to 200°C.
  • Tear the mozzarella into pieces and slice the tomato. 
  • Chop the basil into ribbons.

  • Transfer the baguette to a parchment-lined baking sheet and bake for 6 minutes.
  • Meanwhile, in a salad bowl combine the white wine vinegar with half of the extra virgin olive oil.
  • Add the lettuce and toss well to combine. Season to taste with salt and pepper.

  • Cut open the baguette and spread with the pesto. 
  • Top with the lettuce, tomato, mozzarella and basil. 
  • Drizzle with the crema di balsamico and the rest of the extra virgin olive oil. 
  • Season to taste with salt and pepper.

  • In the meantime, heat the tomato soup in a saucepan over medium-high heat. 
  • Serve the soup in deep plates with the baguette caprese on the side.
